Add a bit of cayenne or your favourite spice mix to kick this recipe up a notch! This recipe is good for any cut of beef but do keep in mind it may affect your baking time, too. Keep an eye on this one!

Ingredients

1/2 to 2 lbs beef, cubed

Salt and pepper

1-2 Tbsp oil for browning

1 medium onion, chopped

1 small green pepper, chopped

1 cup uncooked rice

4 cups tomato juice OR 2 cans tomatoes

1 tsp prepared mustard

1 Tbsp Worcestershire sauce

Preheat oven to 350° F. Cube most any cut of meat. (Stew meat will take a bit longer and hamburger will make a hurry up job.) Salt and pepper the cubes well and brown quickly in oil. Remove from oil and saute the onion and pepper in pan juices until just softened. Mix rice, tomatoes and every favourite flavourings in a casserole dish. Stir in meat, onions and green pepper. Add salt and pepper to taste. Bake at 350° for 1 hour (longer for less tender cuts). You may have to add more liquid to keep it from getting to dry. Goes nicely with a tossed salad.
