Salmon in Baked Potato Shells | NBWI.ca

This simple recipe is easily tweaked for your own flavour sensation – consider adding a bit of cheese to the crumb topping. Or chives!

  • 1 lb Salmon, canned
  • 8 medium-sized potatoes
  • 1 onion, chopped
  • 1 cup bread crumbs
  • 1 Tbsp butter
  • salt and pepper, to taste

Wash and poke the potatoes with a fork to ensure even baking. Bake in the oven till done.

Meanwhile, sautee onions in butter. Remove from heat.

When the potatoes are done, carefully cut the tops off and scoop out potato to create a pocket of space inside. Put the potato shells to the side.

In a bowl, mix sauteed onions, potato and salmon. Add salt and pepper to taste.

Refill each potato shell with the mixture and sprinkle bread crumbs over top and dot with additional butter.

Brown in a hot oven for 25 minutes.

Serves 6 to 8.
