A little sweet, a little savoury! When this recipe says bake until done, you can try using a thin-bladed knife to see if it comes out clean or use a digital thermometer. The internal temperature should be 200 – 205F throughout.
- 2 cups flour
- 3/4 cup sugar
- 3 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 cup crushed pineapple
- 2 egg, beaten
- 2 Tbsp vegetable oil or melted butter
Add the crushed pineapple mixture to dry ingredients and combine just until moistened.
- 1/2 cup mild cheddar cheese, shredded
- 1/2 cup nuts, such as chopped walnuts or pecans or whichever nut you prefer
Pour into a greased 9 x 5 inch loaf pan. Let stand 20 minutes. Bake for 50 minutes or until done.
