We’re not sure if it’s called Fisherman’s Pie because it’s so simple that even a fisherman could make it… No matter who’s cooking – YUM!
- 1 x 15 oz. can salmon
- 1 cup cooked green peas
- 2 or 3 hardboiled eggs
- 2 cups mashed potatoes
- 1 cup white sauce
- Salt and pepper
- 2 Tbsp butter
Drain juice from salmon. Spread salmon in a casserole dish and add the peas. Slice eggs over peas and cover with white sauce. Spread mashed potatoes over top. Sprinkle with salt and pepper and dot with butter. Bake in 350 degree oven for 20 minutes. Serve hot.
White sauce is often called bechamel sauce. To make – melt 2 Tbsp butter in a small sauce pan. Sprinkle in 2 Tbsp flour and mix into a paste. Slowly add milk, stirring constantly as it thickens. Add more milk depending on your desired consistency.
Variation: Potato chips, bread crumbs or biscuit dough may be used instead of mashed potatoes.
