This soup makes an ideal supper dish. It’s very filling and can be frozen easily, too. Remember, if you choose to add frozen vegetables, it also adds liquid to the pot and your frozen veg will be less firm than fresh.

  • 2 lbs ground chuck
  • 6 cups tomato juice or sauce
  • 1 cup stewed tomatoes
  • 1 cup or can of sliced mushrooms
  • 2 cups chopped celery
  • 3 cups green beans, canned or fresh
  • 1 cup sliced carrots
  • 2 cups chopped cabbage
  • 1 Tbsp sweet basil
  • 3 Tbsp dried or green onion
  • 1 Tbsp garlic powder
  • 1 Tbsp Worcestshire sauce
  • 1 bay leaf
  • 1 Tbsp oregano
  • Salt and pepper to taste

Brown beef and drain off fat.

Combine all ingredients in a dutch oven. Simmer about 2 hours.
