This is a mild chili recipe but you can spice it up with your favourite hot sauce. Or kick the heat up a notch by adding a hot pepper or two when you add the tomatoes. Try jalapenos or habaneros!

  • 6 strips bacon
  • 2 medium onions, sliced thin
  • 1 clove garlic, minced
  • 2 lbs ground beef
  • 2 -15 oz cans kidney beans
  • 3 1/2 cups canned tomatoes
  • 1 Tbsp chili powder
  • 1/4 tsp red pepper powder
  • 3/4 tsp oregano
  • 1 tsp salt

Fry bacon crisp and crumble it. Put crumbled bacon aside.

Cook onions and garlic in bacon fat. Add meat and cook until browned. Add the rest of the ingredients and return bacon to the pan. Cover tightly and simmer 30 minutes.
