‘Shrubs’ are vinegar-based drink, infused with fruit, juice, or herbs, for use in mixed drinks.
- White sugar
Wash berries and cover with vinegar. Do not mash, but crush. Stir at least once a day for 3 days. Strain through a bag or cheesecloth. Measure juice and add 1 cup of sugar for each cup of juice. Add mixture to a pot and bring to a boil for 15 minutes. Store in bottles or sealer jars in fridge or cold pantry.
